Organoleptic characteristics

It has a fine and intricate taste, with a hint of green apple and wild herbs, bitter almond, artichoke and nettle; at the end elegant, spicy and persistent, with a pleasant balance of bitter and spicy.
Clear and medium fluidity. Green in colour with golden highlights. Medium fruity with herbaceous aromas and a hint of balsamic herbs. Bitter and spicy of medium intensity and well-balanced. Strictly to be used fresh on grilled vegetables, radishes with pepper and salt, cream of pumpkin and rosemary soup, mixed salad, fish soup, stewed lentils and fresh cheese curd.
