The Olive Groves

Our olive groves include about  40 hectares of land between ownership and direct management, located in the hills between 300 and 400 meters above sea level. Our Organic Farm is situated in Protected Designation of Origin  “Umbria Colli Assisi – Spoleto” territory . The favorable climatic conditions don’t require special interventions for pest management.
The calcareous soil, protected exposure and sunny position made this olive culture always present in the territory, the evidence of the presence of many secular olive trees in our landscape .
Tree training system is polyconic vase that is well suited for a hand picking.

OLIVE VARIETIES

Thanks to our agronomic knowledge we can select olives from individual cultivars trees.
So we can also produce single-variety extra virgin olive oils.

Moraiolo: is a typical local variety, its oil is appreciated for herbaceous scent with intense shades of bitter and spicy.
Frantoio: another typical local variety .
Its dark green with gold highlights oil, is of excellent smell: fine, aromatic and fruity, with hints of spicy and bitter. It can recognize various scents including: fresh grass, sour apple, artichoke, marjoram, rosemary, lettuce, celery and almonds.
Leccino:  Golden yellow with green highlights oil, is of excellent quality but without particular aromatic peaks; fresh taste, slightly fruity, slightly bitter and spicy; They can see hints of herbs (basil, mint), chicory, lettuce, artichoke and Almond.

We have always believed in organic farming and since 1997 we got Organic certification from AIAB-ICEA institute.
The weed control in our olive groves is done only with the presence of our Suffolk sheep in the wild state which also provide the organic fertilization improving olive production.
